Burger and Chips - Plant Based and Low Waste

We have so many courgettes here in the garden and I am constantly trying to come up with recipes to use them up. Burgers: Makes 8 Ingredients: 2 cups courgette/zucchini 1 carrot 1 cup of cooked broad beans or 1 tin broad beans 1 small handful fresh mint 1 medium red chilli 1/4 cup oats 1/4 cup gram flour/chickpea flour 1/8 asafoetida 1/2 tsp turmeric 1/4 salt & pepper Burger Buns: Ingredients: 1 cup flour (I used spelt flour because it is easier to digest and higher in fibre) 1/3 cup water Smashed Potatoes: Ingredients: 20 small potatoes or enough for two people coconut oil and salt Method: Grate the courgettes into a muslin cloth. Simple Vegetable Curry

I love meals that you can throw together with whatever ingredients you have available in the house. I do my best to eat what I grow and buy locally and in season. I made this dinner for two people. Ingredients: 1 chilli, chopped thumb size fresh ginger, chopped 1/4 tsp asafoetida (garlic substitute that is good for digestion) 1/2 tsp turmeric 1 chopped courgette 2 chopped carrots 1 chopped pak choi 1/2 cup of cashews or nuts of choice Sauce: 1 cup tomatoes 1 tin coconut milk (I make sure they are from a good quality brand which has no plastic lining on the inside) 1 tsp salt (I use pink himalayan) 1/2 lemon juiced (you can use your scrap lemon for cleaning before putting in compost) 1/2 tsp
