There is nothing like making your own food. It tastes better and reduces packaging waste. Almonds are one of those nuts that are so high in nutritional benefits, it's a must in every kitchen. They are full of protein, VitE, monounsaturated fats, magnesium and potassium to name but a few. These nutritional benefits make almonds great for your body, especially your heart.
I'm going to show you how to make almond milk from almond butter as I find this the easiest and quickest way.
You can buy almonds very easily in bulk or large quantities.
For this recipe I'll use 1 cup of almonds but feel free to double or triple the recipe.
You can soak the almonds first overnight as this makes them easier to digest but you will have to make sure they are dry before you make them into butter.
Place 1 cup of almonds in a good food processor and blend away. You will have to keep stopping the blender to wipe down the sides and it will look like crumbs at the beginning. Persevere and you will release the oils in the almonds and be left with a creamy consistency.
Transfer to a recycled jar and store in the fridge.
You don't need to add anything else. My favourite is to use as a spread on toast or in porridge.
Take 1 tbsp of almond butter and place in a blender with 1 cup of water.
Whizz up and you'll have one delicious cup of goodness. I find this method much easier than blending and straining the almonds, where you have leftover pulp.
That's it. Simple and nutritious.
I love using the milk to make bircher, which can be made using 1 cup of almond milk to 1 cup of oats and leave overnight in a jam jar. You can add seeds and dried or fresh fruit and in the morning you'll have yourself a nutritious yummy breakfast.
