Grain Free Seeded Crackers

There are a few reasons to make your own crackers. Firstly
they taste fantastic, secondly they are plastic free and unprocessed and thirdly you can pick and choose your favourite ingredients.
I was able to get these ingredients free of plastic and some free of packaging. I understand that not every person has access to package free produce so alternatively try and buy the ingredients in huge quantities to save on plastic waste.
Ingredients:
dry:
1 cup buckwheat flour
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup flaxseeds
1 tbsp poppy or sesame seeds
1/2 tsp sea salt
1 tsp dried rosemary or seasoning of your choice
wet:
1 tbsp lemon juice (about half lemon)
1/4 cup water and extra if dry
3 tbsp melted coconut oil
Method:
Mix all the dry ingredients together in a food processor or high speed blender.
Add the wet ingredients and blend
Place in a bowl and bring together to form a ball with your hands. Add more water if needed until smooth and damp but not soggy.
Place dough on a reusable baking sheet and place another sheet on top.
Role out flat using a rolling pin or glass bottle.
You want them a few millimetres thick
Use the sheet to cut off uneven edges and then role up and flatten out again.
Using a pizza cutter or knife, draw thin lines to the size you want the squares. This will make it easier to cut the squares out after the oven.
Place in the oven at 200c for 10 mins or until golden brown in colour.
Watch closely, as they can go from ready to burnt in the space of a minute. Every oven is different so alter time accordingly.
Remove from oven and cut into squares.
Store in an airtight container and enjoy with a variety of toppings.
