Aquafaba Soda Bread


I always have leftover chickpea water, called aqufaba, after cooking chickpeas. I use this in my hummus recipe but I found it works great in bread too.

Preheat oven to 170c/388f

Ingredients:

2 cups buckwheat Flour

1 cup Oats (use gluten free if needed)

Small handful of seeds. I use pumpkin and sunflower.

1 tsp baking soda

1 cup aquafaba

1 cup oat milk or milk of choice

1 tbsp molasses (optional)

Add the dry ingredients into a bowl and mix

Add the wet ingredients and mix

Add the mixture into an oiled bread tin (otherwise the bread will stick to the sides)

Place in the middle of the oven for approx 40 minutes.

Leave to cool for 30 minutes

Enjoy with hummus or any spread of choice.
