Grain Free Pizza
Making your own pizza is great fun but traditional pizza is made with flour and yeast and I'm not a fan as it is too lengthy a process and grains can be heavy on the digestive system. Every so often it is good to give grains a miss. Buckwheat is not a grain. It is part of the rhubarb family and can be consumed by celiacs. It is also packed full of nutrition and is high in manganese, which we need to absorb nutrients from our food, among other things.
This recipe is very simple and quick to make and pizza lovers will love the crunch and taste.
Preheat oven to 220c/430f
2/3 cups boiled and very well mashed potatoes
1/3 cup buckwheat flour
1/2 tsp salt
Place all the ingredients in a bowl and mix together until formed into a ball.
Lay on a greased baking tray and place a reusable baking sheet on top. Roll out the dough until it resembles a large round shape. Not too thin or not too thick.
Place in the oven for 15 minutes. Keep an eye on it, as it can burn easily.
Take out of the oven and put your toppings on. I used some tomato sauce, courgettes and red peppers.
